Ingredients

2 boneless, skinless chicken breasts

Salt and pepper, to taste

1 tablespoon olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 teaspoon dried oregano

1 teaspoon dried basil

1 cup heavy cream

1 cup chicken broth

8 oz fettuccine pasta

1 cup grated Parmesan cheese

2 cups fresh spinach

Fresh basil leaves, for garnish

Red pepper flakes (optional, for heat)

Instructions

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-7 minutes on each side or until fully cooked. Remove from the skillet and let rest before slicing.

Sauté Aromatics: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Stir in the halved cherry tomatoes, dried oregano, and dried basil. Cook until the tomatoes begin to soften, about 3-4 minutes.

Create the Sauce: Pour in the heavy cream and chicken broth. Bring to a gentle simmer and cook for another 2-3 minutes to combine all flavors.

Cook the Pasta: While the sauce simmers, cook the fettuccine pasta according to package instructions. Drain and set aside.

Finish the Dish: Mix in the grated Parmesan cheese and stir until melted and creamy. Add the fresh spinach and cooked fettuccine to the skillet, stirring to coat everything in the sauce. Slice the cooked chicken and lay it on top.

Serving: Plate the pasta, and garnish with fresh basil leaves and a sprinkle of red pepper flakes if desired. Serve immediately and enjoy a culinary experience that guarantees “I do!”
