2 boneless, skinless chicken breasts

Salt and pepper to taste

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon Italian seasoning

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

8 oz pasta (fettuccine or penne)

Fresh basil leaves for garnish

Red pepper flakes (optional for a kick)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: Season both sides of the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium heat. Once hot, add the chicken and cook for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet and set aside to rest, then slice into strips.

      Sauté the Aromatics: In the same skillet, add the minced garlic and Italian seasoning. Sauté for about 1 minute until fragrant, taking care not to burn the garlic.

        Add the Tomatoes: Add the halved cherry tomatoes to the skillet. Cook for 3-4 minutes until the tomatoes start to soften.

          Create the Sauce: Pour in the heavy cream and chicken broth. Stir well and bring to a simmer. Let it cook for about 5-7 minutes, or until the sauce thickens slightly.

            Incorporate Cheese: Stir in the grated Parmesan cheese until melted and combined. Taste the sauce and adjust seasoning if necessary.

              Combine: Add the cooked pasta to the skillet and toss to coat in the creamy sauce. Gently fold in the sliced chicken.
