2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust for spice level)

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup chicken broth

1 cup parmesan cheese, grated

8 ounces fettuccine or pasta of choice

Fresh basil leaves, for garnish

Optional: extra parmesan for serving

Prepare the Chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for about 5-7 minutes on each side, or until browned and cooked through. Transfer the chicken to a cutting board and slice it into strips.

    Sauté Aromatics: In the same skillet, add the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

      Make the Sauce: Add the sun-dried tomatoes, heavy cream, and chicken broth to the skillet. Stir well and bring to a gentle simmer. Cook for about 3-5 minutes until the sauce thickens slightly.

        Cook the Pasta: While the sauce is simmering, cook the fettuccine according to the package directions until al dente. Drain the pasta and reserve about half a cup of the pasta cooking water.

          Combine Pasta and Chicken: Add the cooked pasta to the skillet with the sauce, stirring to combine. If the sauce is too thick, add in reserved pasta cooking water a little at a time until desired consistency is reached. Stir in the grated parmesan cheese until melted and well combined.

            Finish Up: Add the sliced chicken back to the skillet and gently toss to coat everything in the creamy sauce. Taste and adjust seasoning if needed.
