Ingredients
  

2 boneless, skinless chicken breasts

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

8 oz fettuccine or penne pasta

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.

      Sear the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and cook for about 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set it aside to rest.

        Make the Sauce: In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. Sauté for about 1 minute until fragrant.

          Combine Ingredients: Add the sun-dried tomatoes to the skillet and cook for another 2 minutes. Then pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer and cook for about 3-4 minutes, allowing the sauce to thicken slightly.

            Add Parmesan: Stir in the grated Parmesan cheese until melted and smooth. If the sauce becomes too thick, add a little more chicken broth to reach your desired consistency.

              Combine Pasta and Chicken: Slice the cooked chicken and add it back to the skillet along with the drained pasta. Toss everything together until the pasta is well coated with the creamy sauce.

                Season and Serve: Adjust seasoning with salt, pepper, and red pepper flakes to taste. Remove from heat.

                  Garnish: Serve hot, garnished with fresh basil leaves and extra Parmesan if desired.
