2 boneless, skinless chicken breasts

4 cups chicken broth

1 cup carrots, diced

1 cup celery, diced

1 medium onion, chopped

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon paprika

1 cup heavy cream

¼ cup fresh parsley, chopped

Salt and pepper to taste

2 tablespoons olive oil

1 cup small pasta (like orzo or ditalini)

Instructions
 

In a large pot over medium heat, add olive oil. Once hot, add the chopped onion, carrots, and celery. Sauté for about 5 minutes or until the vegetables start to soften.

    Stir in the minced garlic, dried thyme, dried rosemary, and paprika. Sauté for another minute until fragrant.

      Season the chicken breasts with salt and pepper, then add them to the pot. Pour in the chicken broth and bring the mixture to a simmer.

        Once simmering, cover and let it cook for about 15 minutes, or until the chicken is cooked through.

          Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.

            Add the small pasta and heavy cream to the soup. Simmer gently for an additional 10 minutes until the pasta is cooked.

              Stir in the chopped parsley and adjust seasoning with salt and pepper, if needed.

                Serve hot, garnished with extra parsley if desired.
