12 oz fresh or frozen cheese tortellini

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup baby spinach

Salt and pepper, to taste

Fresh basil leaves, for garnish

Optional: Toasted pine nuts for extra crunch

Instructions
 

In a large pot, bring salted water to a boil. Cook the tortellini according to package instructions until al dente. Drain and set aside.

    In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.

      Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes, until they begin to soften.

        Pour in the heavy cream, stirring to combine. Bring the mixture to a gentle simmer and let cook for another 2-3 minutes.

          Gradually add the Parmesan cheese, stirring until melted and creamy. Season with salt and pepper to taste.

            Add the spinach, allowing it to wilt gently in the sauce.

              Finally, gently stir in the cooked tortellini, ensuring they are well coated with the creamy sauce.
