Ingredients

1 lb ground beef

1/2 lb ground pork

1 cup breadcrumbs

1 large onion, finely chopped

2 cloves garlic, minced

1/4 cup ketchup

1 large egg

1 teaspoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon pepper

4 cups mashed potatoes (prepared, can use leftovers)

1 cup shredded cheese (cheddar or your choice)

1/4 cup milk

1 tablespoon butter

Fresh parsley for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Meatloaf Mixture: In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, chopped onion, minced garlic, ketchup, egg, Worcestershire sauce, thyme, salt, and pepper. Mix until well combined.

Shape the Meatloaf: Transfer the meat mixture to a greased 9x13 inch casserole dish and shape it into a loaf form in the center of the dish, leaving space for the mashed potatoes around it.

Bake the Meatloaf: Place the casserole dish in the preheated oven and bake for 30 minutes.

Prepare the Mashed Potatoes: While the meatloaf is baking, mix the prepared mashed potatoes with milk and butter until creamy. If you're using leftovers, ensure they are warmed and fluffy.

Add Mashed Potatoes: After 30 minutes, remove the casserole from the oven. Spread the mashed potatoes evenly over the meatloaf, covering it completely.

Add Cheese: Sprinkle the shredded cheese equally over the mashed potato layer.

Final Bake: Return the casserole to the oven and bake for an additional 20-25 minutes, or until the cheese is bubbly and golden brown.

Garnish and Serve: Once baked, remove from the oven and let it cool for about 5 minutes. Garnish with fresh parsley before serving.

                    Prep Time: 15 mins | Total Time: 1 hr | Servings: 6

                      - Presentation Tips: Cut the casserole into squares and serve on plates with a scoop of extra ketchup or gravy on the side if desired. Pair it with a simple salad for a complete meal!
