1 lb ground beef

1 lb ground pork

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup diced bell pepper (any color)

1/2 cup milk

2 large eggs

1/4 cup Worcestershire sauce

1 tablespoon Dijon mustard

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup ketchup (for glaze)

2 tablespoons brown sugar (for glaze)

Fresh parsley for garnish

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine the ground beef and pork. Use your hands to mix them until evenly blended.

      Add the breadcrumbs, Parmesan cheese, chopped onion, minced garlic, diced bell pepper, milk, eggs, Worcestershire sauce, Dijon mustard, dried thyme, smoked paprika, salt, and pepper. Mix until just combined; avoid overmixing to keep the meatloaf tender.

        Shape the mixture into a loaf and place it in a greased 9x5 inch loaf pan.

          In a small bowl, whisk together the ketchup and brown sugar. Spread the mixture generously over the top of the meatloaf for a sweet glaze.

            Bake in the preheated oven for 1 hour or until the internal temperature reaches 160°F (70°C).

              Allow the meatloaf to rest for about 10 minutes before slicing. Garnish with fresh parsley for a pop of color.

                Serve slices with your favorite sides, like mashed potatoes or green beans.
