4 fresh white fish fillets (such as cod or tilapia)

3 tablespoons olive oil

2 lemons (1 sliced, 1 juiced)

2 teaspoons dried oregano

1 teaspoon smoked paprika

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1/2 cup Kalamata olives, pitted and sliced

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Instructions
 

Preheat your oven to 400°F (200°C).

    In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, smoked paprika, salt, and pepper.

      Place the fish fillets in a large baking dish and pour the olive oil mixture over them, ensuring each fillet is coated.

        Scatter cherry tomatoes and olives around the fish in the baking dish. Add the lemon slices on top of the fish.

          Bake for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.

            Once out of the oven, sprinkle with fresh parsley for a burst of color and flavor.
