4 large eggs

1/4 cup milk

1/2 cup diced tomatoes

1/4 cup diced bell peppers (red and green)

1/4 cup finely chopped red onion

1 jalapeño, deseeded and minced

1/2 cup shredded cheddar cheese

1/2 tsp ground cumin

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Olive oil for cooking

Instructions
 

In a large mixing bowl, whisk together the eggs and milk until well combined. Season with salt, pepper, and cumin.

    Heat a non-stick skillet over medium heat and add a splash of olive oil. Once hot, add the diced bell peppers, onion, and jalapeño. Sauté for about 3-4 minutes until they soften.

      Add the diced tomatoes to the skillet and cook for another 1-2 minutes. Remove the vegetable mixture from the skillet and set aside. Wipe the skillet clean.

        Pour the egg mixture into the same skillet over medium-low heat. Allow the eggs to set around the edges for about 2-3 minutes.

          Once the edges are set, gently lift them with a spatula to let the uncooked egg flow underneath. After 1-2 minutes more, spoon the sautéed vegetable mixture evenly over one half of the omelette.

            Sprinkle the shredded cheddar cheese over the vegetables, then fold the omelette in half to cover the filling. Cook for an additional 1-2 minutes until the cheese melts and the eggs are fully cooked.

              Carefully slide the omelette onto a plate and garnish with fresh cilantro.
