Mexican Street Corn White Chicken Chili

1 lb boneless, skinless chicken breasts

1 tablespoon olive oil

1 onion, diced

3 cloves garlic, minced

2 teaspoons ground cumin

1 teaspoon smoked paprika

1 can (15 oz) fire-roasted diced tomatoes

2 cups chicken broth

1 can (15 oz) white beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1-2 jalapeños, diced (adjust to taste)

1 cup heavy cream or coconut milk

Salt and pepper to taste

Juice of 1 lime

Fresh cilantro, chopped, for garnish

Crumbled queso fresco or feta cheese, for topping

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic, ground cumin, and smoked paprika. Cook for an additional minute until fragrant.

      Add the chicken breasts to the pot and sear them on both sides for about 2-3 minutes.

        Pour in the fire-roasted diced tomatoes, chicken broth, white beans, corn kernels, and jalapeños. Bring the mixture to a boil.

          Reduce heat to low and cover. Let it simmer for about 20-25 minutes, or until the chicken is cooked through.

            Carefully remove the chicken from the pot, shred it using two forks, and return it back to the chili.

              Stir in the heavy cream (or coconut milk) and season with salt and pepper to taste. Allow it to heat through for another 5 minutes.

                Before serving, stir in the lime juice for a fresh burst of flavor.

                  Serve hot, garnished with chopped cilantro and crumbled cheese on top.
