For the Shortbread Layer:

225g unsalted butter, softened

110g granulated sugar

250g all-purpose flour

75g cornstarch

1/4 tsp salt

For the Caramel Layer:

200g granulated sugar

100g unsalted butter, cubed

200ml sweetened condensed milk

1 tsp vanilla extract

A pinch of sea salt

For the Chocolate Topping:

200g dark chocolate (70% cocoa)

50g milk chocolate

A sprinkle of sea salt (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 180°C (350°F). Line a 9x9 inch (23x23 cm) square baking pan with parchment paper, leaving some overhang for easy removal.

    Make the Shortbread Base:

      - In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

        - Gradually add the all-purpose flour, cornstarch, and salt, mixing until a soft dough forms.

          - Press the dough evenly into the bottom of the prepared baking pan.

            - Bake in the preheated oven for 20 minutes or until lightly golden. Remove and let cool completely.

              Prepare the Caramel Filling:

                - In a medium saucepan over medium heat, combine the granulated sugar. Allow it to melt, stirring constantly until it turns a deep amber color.

                  - Add the cubed butter and whisk until melted and combined.

                    - Slowly stir in the sweetened condensed milk and continue to cook for about 5-7 minutes, stirring until the caramel thickens slightly and reaches the desired consistency. Remove from heat and mix in the vanilla extract and sea salt.

                      - Pour the caramel over the cooled shortbread base, ensuring an even layer. Let it cool to room temperature.

                        Make the Chocolate Topping:

                          - In a heatproof bowl, combine the dark chocolate and milk chocolate. Melt in the microwave in 30-second intervals, stirring until smooth and fully melted.

                            - Pour the melted chocolate over the cooled caramel layer, smoothing it out with a spatula. Sprinkle a few flakes of sea salt on top for that perfect salty-sweet balance.

                              Chill and Serve:

                                - Refrigerate the entire tray for about 2 hours or until set. Once set, use the parchment paper to lift the Millionaire Shortbread out of the pan.

                                  - Cut into squares or bars, and serve.
