3 medium-sized apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1 teaspoon lemon juice

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 cup brown sugar

1 tablespoon cornstarch

1 tablespoon unsalted butter, melted

1 package of refrigerated pie crusts (2 crusts)

1 egg, beaten (for egg wash)

Extra sugar for sprinkling

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Apples: In a mixing bowl, combine the diced apples, lemon juice, cinnamon, nutmeg, brown sugar, and cornstarch. Mix well to ensure the apples are evenly coated. Let the mixture sit for about 10 minutes to allow the flavors to meld.

      Roll Out the Pie Crust: Unroll the refrigerated pie crusts on a floured surface. Using a round cookie cutter or a glass, cut out circles that are about 4 inches in diameter.

        Fill the Mini Pies: Place half of the circles onto a baking sheet lined with parchment paper. Spoon about 2 tablespoons of the apple mixture onto the center of each pie crust circle. Be careful not to overfill.

          Seal the Pies: Top each filled pie with another crust circle. Seal the edges by pressing down with a fork to create a decorative border. Cut small slits on the top of each pie to allow steam to escape.

            Apply Egg Wash: Brush the tops of the pies with beaten egg and sprinkle a little extra sugar for sweetness and a nice crunch.

              Bake: Bake the mini pies in the preheated oven for about 20-25 minutes, or until the tops are golden brown.

                Cool & Serve: Remove the mini apple pies from the oven and let them cool on a wire rack for a few minutes before serving warm.
