12 baby potatoes, scrubbed clean

2 tablespoons olive oil

1 teaspoon sea salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/2 cup sour cream

1/4 cup chopped chives

1/4 cup grated cheddar cheese

Optional: crispy bacon bits for topping

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large bowl, toss the baby potatoes with olive oil, sea salt, black pepper, garlic powder, and smoked paprika until evenly coated.

      Arrange the potatoes in a single layer on a baking sheet lined with parchment paper.

        Bake in the preheated oven for 25-30 minutes or until the potatoes are tender and golden, tossing halfway through for even cooking.

          Once cooked, remove the potatoes from the oven and let them cool slightly.

            Using a sharp knife or a small spoon, create a pocket at the top of each baked potato by gently scooping out a small portion of the flesh.

              Fill each pocket with a dollop of sour cream, a sprinkle of chives, and a bit of grated cheddar cheese. (Optional: top with crispy bacon bits for an extra crunch!)

                Return the stuffed potatoes to the oven for an additional 5 minutes to warm everything through and slightly melt the cheese.

                  Remove from the oven and serve hot, garnished with extra chives or cheese if desired.
