Ingredients

1 cup graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

2 ripe bananas, sliced

2 cups whole milk

1/2 cup granulated sugar

1/4 cup cornstarch

1/4 teaspoon salt

3 large egg yolks

1 tablespoon vanilla extract

1 cup heavy cream

2 tablespoons powdered sugar

Additional banana slices and whipped cream for garnish

Instructions

Prepare the Crust: In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until crumbs are evenly coated. Press mixture firmly into the bottom and up the sides of mini tartlet pans (or a muffin tin for individual servings). Bake at 350°F (175°C) for 8-10 minutes until set and lightly golden. Let cool completely.

Make the Custard: In a medium saucepan, whisk together whole milk, granulated sugar, cornstarch, and salt. Cook over medium heat, stirring constantly until it thickens and starts to bubble (about 5-7 minutes).

Add Egg Yolks: In a small bowl, whisk the egg yolks. Slowly pour about a cup of the hot milk mixture into the egg yolks while whisking continuously to temper. Then, pour the yolk mixture back into the saucepan. Cook for an additional 2-3 minutes while stirring. Add vanilla extract and mix well.

Assemble the Pies: Once the custard is ready, let it cool slightly. Place a layer of banana slices at the bottom of each cooled crust, then fill with the custard mixture. Smooth the tops, cover with plastic wrap, and refrigerate for at least 4 hours or until set.

Whip the Cream: In a mixing bowl, whip the heavy cream and powdered sugar until soft peaks form.

Finish and Serve: Once the mini pies have set, dollop whipped cream on top of each pie, add a slice of banana, and drizzle with chocolate syrup if desired.

Prep Time: 25 minutes | Total Time: 4 hours 25 minutes | Servings: 12 mini pies

                - Presentation Tips: Serve the mini pies on a platter, garnished with fresh mint leaves for a pop of color. Drizzle some extra chocolate sauce around the pies for an elegant touch. Enjoy!
