Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or grease it lightly.

    In a mixing bowl, combine the mashed bananas and melted coconut oil, mixing until well blended.

      Stir in the brown sugar, egg, and vanilla extract until the mixture is smooth.

        Sprinkle the baking soda and salt over the mixture, and mix to combine.

          Gradually fold in the flour and ground cinnamon, being careful not to overmix. If using, gently fold in the chocolate chips and walnuts.

            Spoon the batter into the prepared mini muffin tins, filling each cup about 2/3 full.

              Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean.

                Remove from the oven and let them cool in the tin for about 5 minutes before transferring to a wire rack to cool completely.
