For the Crust:

1 cup graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the Cheesecake Filling:

16 oz cream cheese, softened

1/2 cup granulated sugar

1 tsp vanilla extract

2 large eggs

1/4 cup heavy cream

For the Brûlée Topping:

1/4 cup granulated sugar

1 tsp vanilla extract

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C). Line a mini muffin tin with paper liners.

    Prepare the Crust:

      - In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until fully combined and crumbly.

        - Press approximately 1 tablespoon of the mixture into the bottom of each mini muffin liner, packing it down firmly. Bake for 5-7 minutes or until golden. Remove from the oven and allow to cool.

          Make the Cheesecake Filling:

            - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

              - Add 1/2 cup sugar and 1 tsp vanilla extract, mixing until well incorporated.

                - Add eggs one at a time, mixing just until combined. Do not overmix! Then, stir in the heavy cream until the mixture is smooth.

                  Fill the Cups:

                    - Pour the cheesecake filling over the pre-baked crusts, filling each mini muffin liner about 3/4 full.

                      Bake:

                        - Bake for 15-18 minutes or until the cheesecakes are set around the edges but still slightly jiggly in the center. Remove from the oven and let them cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

                          Chill:

                            - Once cooled, refrigerate the cheesecake bites for at least 2 hours or preferably overnight for better texture.

                              Prepare the Brûlée Topping:

                                - When ready to serve, sprinkle approximately 1 tsp of granulated sugar over each cheesecake bite.

                                  - Using a kitchen torch, carefully brûlée the sugar until it melts and forms a golden, crispy crust. If you don’t have a torch, you can place them under a broiler for a few minutes, watching closely to prevent burning.

                                    Serve:
