Ingredients
  

12 small baby potatoes

1 cup shredded cheddar cheese

1/2 cup cooked and crumbled bacon

1/4 cup sour cream

2 green onions, thinly sliced

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper, to taste

Fresh parsley, for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    Wash the baby potatoes thoroughly and poke each potato several times with a fork to allow steam to escape.

      Place the potatoes on a baking sheet and drizzle with olive oil. Sprinkle with salt, pepper, and garlic powder, then toss to coat evenly.

        Bake the potatoes for about 25-30 minutes, or until they are tender when pierced with a fork.

          Once cooked, let them cool for about 5 minutes, then slice each potato in half lengthwise.

            Using a small spoon, carefully scoop out a little bit of the flesh from the center of each potato half, being careful not to break the skin.

              Fill each potato skin with a mix of shredded cheddar cheese and crumbled bacon, dividing it evenly among the halves.

                Return the filled potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                  Remove from the oven and let cool slightly. Drizzle with sour cream, and sprinkle with sliced green onions and fresh parsley for garnish.
