4 large russet potatoes, washed and scrubbed

1 cup sour cream

1 cup sharp cheddar cheese, shredded

1/2 cup crispy bacon bits

1/4 cup green onions, chopped

1/4 cup unsalted butter, melted

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup mini marshmallows (optional, for a sweet finish)

1/4 cup chocolate syrup (optional, for drizzle)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Potatoes: Poke several holes in each potato using a fork. Bake them directly on the oven rack for about 45-60 minutes, or until they are tender when pierced with a knife.

      Mix Sauce: In a large bowl, combine sour cream, melted butter, garlic powder, smoked paprika, salt, and pepper. Mix well until creamy and smooth.

        Assemble Filling: After potatoes are done, remove them from the oven and allow them to cool slightly. Slice each potato in half length-wise and gently scoop out some of the flesh into a bowl, leaving a bit of potato on the skin for structure.

          Combine Ingredients: Add the scooped potato flesh to the sauce mixture, then fold in cheddar cheese, bacon bits, and most of the green onions (reserve some for garnish). Stir well until combined.

            Stuff Potatoes: Spoon the mixture back into the potato skins, filling them generously.

              Optional Sweet Twist: For a unique touch, sprinkle mini marshmallows on top of each stuffed potato or drizzle with chocolate syrup if you're feeling adventurous.

                Bake Again: Return the stuffed potatoes to the oven for an additional 15-20 minutes until the tops are golden and bubbly.
