2 cups brewed espresso, cooled

3 tablespoons cocoa powder, plus extra for dusting

1 cup heavy cream

1 cup mascarpone cheese

3/4 cup granulated sugar

1 teaspoon vanilla extract

24 ladyfinger biscuits

1/4 cup milk chocolate shavings (for garnish)

1/4 teaspoon instant coffee granules (optional, for extra coffee flavor)

Instructions
 

In a shallow dish, mix the cooled espresso with 1 tablespoon of cocoa powder and the instant coffee granules (if using). Stir until combined.

    In a large mixing bowl, whip the heavy cream until stiff peaks form.

      In another bowl, combine the mascarpone cheese, granulated sugar, and vanilla extract. Mix until smooth.

        Gently fold the whipped cream into the mascarpone mixture until well combined, being careful not to deflate the cream.

          Quickly dip half of the ladyfinger biscuits into the espresso mixture, soaking them for just 1-2 seconds on each side to avoid sogginess.

            Layer the soaked ladyfingers at the bottom of a 9x9 inch square dish.

              Spread half of the mascarpone mixture over the layer of ladyfingers.

                Repeat the soaking process with the remaining ladyfingers and layer them over the mascarpone mixture.

                  Pour the rest of the mascarpone mixture on top and smooth out the surface with a spatula.

                    Dust the top with the remaining cocoa powder and sprinkle chocolate shavings for added decoration.

                      Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld and the tiramisu to set.
