Ingredients

4 bone-in, skin-on chicken thighs

1/2 cup unsalted butter (1 stick)

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh parsley (chopped, for garnish)

1 lemon (juiced and zested)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Butter Mixture: In a medium microwave-safe bowl, melt the butter. Once melted, stir in the garlic powder, onion powder, smoked paprika, dried thyme, salt, pepper, lemon juice, and lemon zest until well combined.

Prepare the Chicken: Pat the chicken thighs dry with paper towels to remove any excess moisture. This helps to achieve a crispy skin.

Arrange the Chicken: In a large oven-safe skillet or baking dish, arrange the chicken thighs skin-side up. Pour the melted butter mixture evenly over the chicken thighs, making sure to coat them well.

Bake the Chicken: Bake in the preheated oven for 45-50 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C). For a crispier skin, you can broil the chicken for an additional 2-3 minutes at the end of the cooking time.

Serve: Once cooked, remove from the oven and let the chicken rest for about 5 minutes. Garnish with freshly chopped parsley before serving. This dish goes beautifully with roasted vegetables or mashed potatoes.
