Ingredients

8 ounces spaghetti

2 cups cooked chicken, shredded

1 cup Monterey Jack cheese, grated

1 cup cheddar cheese, grated

1 cup salsa

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh or frozen)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

½ teaspoon smoked paprika

Salt and pepper to taste

¼ cup fresh cilantro, chopped (optional for garnish)

2 tablespoons olive oil

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Cook the Spaghetti: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package directions until al dente. Drain and set aside.

Prepare the Chicken Mixture: In a large mixing bowl, combine the shredded chicken, Monterey Jack cheese, black beans, corn, salsa, garlic powder, onion powder, cumin, smoked paprika, and half of the cheddar cheese. Season with salt and pepper to taste and mix until well combined.

Combine with Spaghetti: Add the drained spaghetti to the chicken mixture. Drizzle with olive oil and gently fold everything together until the spaghetti is evenly coated with the mixture.

Transfer to Baking Dish: Pour the spaghetti and chicken mixture into a greased 9x13 inch baking dish, spreading it evenly.

Add Cheese Topping: Sprinkle the remaining cheddar cheese evenly over the top.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.

Garnish and Serve: Remove from the oven and let it sit for about 5 minutes. If desired, garnish with fresh chopped cilantro before serving.
