Ingredients
  

1 ½ cups warm water (110°F to 115°F)

1 packet (2 ¼ teaspoons) active dry yeast

1 tablespoon granulated sugar

4 cups all-purpose flour

1 teaspoon salt

½ cup baking soda

2 cups shredded mozzarella cheese

1 large egg (beaten, for egg wash)

Coarse sea salt (for sprinkling)

2 tablespoons olive oil (for greasing)

Instructions
 

Activate Yeast: In a mixing bowl, combine warm water, yeast, and sugar. Let it sit for about 5-10 minutes until it froths.

    Mix Dough: In a large bowl, mix the flour and salt. Then, add the yeast mixture and combine until a shaggy dough forms.

      Knead Dough: Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

        First Rise: Grease a large bowl with olive oil, place the dough inside, cover with a damp cloth, and let it rise in a warm place for 1 hour or until it doubles in size.

          Divide Dough: Once risen, punch down the dough and transfer it to a floured surface. Divide it into 12 equal pieces.

            Stuff with Cheese: Take each piece and flatten it into a circle. Place about 1 tablespoon of mozzarella cheese in the center, fold the dough around the cheese, and pinch to seal it. Roll into a ball and place on a greased baking tray.

              Boil Pretzels: In a large pot, bring 10 cups of water and the baking soda to a boil. Carefully drop each stuffed dough ball into the boiling water for about 30 seconds, then remove with a slotted spoon and place back on the baking tray.

                Egg Wash & Sprinkle: Brush each pretzel with the beaten egg and sprinkle with coarse sea salt.

                  Bake: Preheat your oven to 425°F (220°C). Bake the pretzels for 12-15 minutes or until golden brown.
