Ingredients

4 boneless, skinless chicken breasts

1 cup fresh mushrooms (button, cremini, or shiitake), sliced

1 small onion, finely chopped

3 cloves garlic, minced

1 cup chicken broth (low sodium)

1 tablespoon soy sauce

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

Fresh parsley for garnish

Instructions

Prepare the Chicken: Season both sides of the chicken breasts with salt, pepper, thyme, and rosemary. Set aside.

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for another minute until fragrant.

Cook the Chicken: Push the onion and garlic to the side of the skillet and add the seasoned chicken breasts. Brown them for about 5-6 minutes on each side until golden brown.

Incorporate Mushrooms: Add the sliced mushrooms to the skillet. Sauté for about 5 minutes until they’re tender and have released their juices.

Add Liquids: Pour in the chicken broth and soy sauce, stirring to combine. Ensure the chicken is well-coated in the broth mixture.

Simmer: Bring the mixture to a gentle simmer, cover the skillet, and let it cook for about 15-20 minutes or until the chicken is thoroughly cooked and reaches an internal temperature of 165°F (75°C).

Final Touch: Taste the sauce and adjust seasoning with additional salt and pepper if needed.

Garnish and Serve: Once cooked, remove the skillet from heat. Garnish with freshly chopped parsley before serving.

                  Prep Time: 10 minutes | Total Time: 40 minutes | Servings: 4

                    - Presentation Tips: Serve the mushroom chicken on a bed of creamy mashed potatoes or fluffy rice, spooning the flavorful sauce generously over the top. A sprinkle of fresh parsley adds a vibrant color contrast. Enjoy!
