12 lasagna noodles

2 tablespoons olive oil

1 onion, finely chopped

4 cloves garlic, minced

500g (about 1 lb) assorted mushrooms (cremini, shiitake, and button), sliced

2 cups fresh spinach

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

2 cups ricotta cheese

1 egg

3 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

2 cups marinara sauce

Instructions
 

Preheat your oven to 375°F (190°C).

    Cook the lasagna noodles according to the package instructions until al dente. Drain and set aside.

      Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.

        Add the minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms have released their moisture and are browned, about 8–10 minutes.

          Stir in the fresh spinach, oregano, thyme, salt, and pepper. Cook until the spinach is wilted. Remove from heat and let it cool slightly.

            In a mixing bowl, combine ricotta cheese, egg, and half of the mozzarella cheese. Stir until well mixed.

              Spread a layer of marinara sauce at the bottom of a 9x13 inch baking dish.

                Place three lasagna noodles over the sauce. Spread half of the ricotta mixture over the noodles, then layer half of the mushroom mixture on top.

                  Add another three noodles, followed by another layer of marinara sauce, the second half of the ricotta mixture, and the remaining mushroom mixture.

                    Top with the last three noodles and cover with the remaining marinara sauce. Sprinkle the remaining mozzarella cheese and Parmesan cheese on top.

                      Cover the baking dish with aluminum foil (to prevent sticking, spray foil with cooking spray) and bake for 25 minutes. Remove the foil and bake for an additional 15–20 minutes, or until the cheese is bubbly and golden brown.

                        Let the lasagna cool for about 10–15 minutes before slicing and serving.
