8 oz (225g) fettuccine or pasta of choice

2 cups fresh mushrooms (cremini or button), sliced

2 tbsp olive oil

3 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/4 cup vegetable or chicken broth

1 tsp dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving ¼ cup of the pasta water.

    Sauté Mushrooms: In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and cook for about 5-7 minutes until they are tender and golden brown. Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.

      Prepare the Sauce: Lower the heat and pour in the heavy cream, stirring to combine. Add the vegetable or chicken broth, dried thyme, and Parmesan cheese. Cook for another 3-4 minutes until the sauce thickens slightly, stirring frequently. If the sauce is too thick, add some reserved pasta water until you reach your desired consistency.

        Combine: Add the cooked pasta to the skillet, tossing to coat evenly in the creamy mushroom sauce. Season with salt and pepper to taste.
