500g mixed mushrooms (cremini, shiitake, and button), chopped

1 medium onion, diced

2 cloves garlic, minced

3 tablespoons olive oil

4 cups vegetable broth

1 cup heavy cream (or coconut cream for a vegan option)

1 teaspoon dried thyme

1 teaspoon fresh parsley, chopped (for garnish)

Salt and pepper to taste

1 tablespoon balsamic vinegar (for depth of flavor)

Optional: 1 teaspoon truffle oil for a luxurious finish

Instructions
 

Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until softened and translucent, about 5 minutes.

    Stir in the minced garlic and dried thyme, cooking for an additional 1–2 minutes until fragrant.

      Add the chopped mushrooms to the pot, stirring well to combine. Cook for about 8-10 minutes, or until the mushrooms have released their moisture and are nicely browned.

        Pour in the vegetable broth and bring the mixture to a gentle simmer. Cover and let simmer for 15-20 minutes.

          After simmering, use an immersion blender to puree the soup until smooth. (Alternatively, transfer in batches to a blender.)

            Return the pot to low heat and stir in the heavy cream and balsamic vinegar. Allow to warm through for about 5 minutes. Adjust consistency with additional broth if necessary.

              Season the soup with salt and pepper to taste. If using, drizzle in the truffle oil just before serving.

                Serve warm, garnished with fresh parsley.
