Ingredients
  

1 cup orzo pasta

150g nduja sausage

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 cup cherry tomatoes, halved

2 cups vegetable broth

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese for serving (optional)

Instructions
 

In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.

    Stir in the minced garlic, and cook for an additional minute until fragrant.

      Add the diced red bell pepper and cook for 3-4 minutes until it starts to soften.

        Incorporate the nduja sausage into the pan, breaking it up with a spatula, and cook for about 3 more minutes until it starts to brown.

          Add the halved cherry tomatoes and dried oregano, stirring them into the mixture. Cook until the tomatoes soften slightly, about 3 minutes.

            Pour in the vegetable broth and bring the mixture to a boil.

              Once boiling, add the orzo pasta to the pan. Stir gently and reduce the heat to a simmer. Cook for about 10 minutes, or until the orzo is al dente, stirring occasionally to prevent sticking.

                Season with salt and pepper to taste. If the mixture seems too dry, add a splash more broth or water.

                  Remove from heat, let it sit for a couple of minutes to thicken.

                    Serve warm, garnished with fresh basil leaves and a sprinkle of grated Parmesan cheese if desired.
