Ingredients

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 cups cream cheese, softened

1 cup granulated sugar

2 teaspoons vanilla extract

1 cup heavy whipping cream

1 tablespoon lemon juice

1 cup cherry pie filling (optional for topping)

Instructions

In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until well combined.

Press the graham cracker mixture into the bottom of a 9-inch springform pan, forming an even layer. Use the back of a measuring cup to pack it down tightly.

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

Gradually add the granulated sugar and continue to beat until well incorporated.

Mix in the vanilla extract and lemon juice, combining until smooth.

In a separate bowl, whip the heavy whipping cream until stiff peaks form.

Gently fold the whipped cream into the cream cheese mixture until no streaks remain, being careful not to deflate the whipped cream.

Pour the cream cheese filling onto the prepared crust, smoothing it out evenly with a spatula.

Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours or preferably overnight to set fully.

Once set, carefully remove the sides of the springform pan. If desired, top with cherry pie filling or any fruit of your choice before serving.
