1 package (15.25 oz) Oreo cookies

8 oz cream cheese, softened

1 teaspoon peppermint extract

8 oz white chocolate chips

1 tablespoon coconut oil (optional for smoothness)

Crushed candy canes or holiday sprinkles, for topping

Instructions
 

Begin by placing the Oreo cookies in a food processor. Pulse them until they are finely crushed. You should have about 2 ½ cups of Oreo crumbs.

    In a medium mixing bowl, combine the crushed Oreo cookies, softened cream cheese, and peppermint extract. Mix until well-combined and the mixture holds together. You can use your hands for easier mixing.

      Once combined, scoop out about a tablespoon of the mixture and roll it into a ball. Place each ball onto a parchment-lined baking sheet. Repeat this process until all the mixture has been formed into truffles.

        In a microwave-safe bowl, melt the white chocolate chips with the coconut oil (if using) in 30-second increments, stirring in between until completely melted and smooth.

          Dip each truffle into the melted white chocolate, using a fork to allow excess to drip off. Return the coated truffles to the baking sheet.

            Before the chocolate sets, sprinkle the tops of the truffles with crushed candy canes or holiday sprinkles for a festive touch.

              Once all truffles are coated and decorated, refrigerate them for at least 30 minutes, or until set.
