1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

3 cups rolled oats

1 cup raisins

1/2 cup chopped walnuts (optional)

1 teaspoon cinnamon

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper for easy removal.

    In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy.

      Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

        In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.

          Gradually add the dry ingredients to the wet mixture, mixing until combined.

            Fold in the rolled oats, raisins, and walnuts (if using) until evenly distributed.

              Spread the dough evenly in the prepared baking pan, smoothing out the top with a spatula.

                Bake in the preheated oven for 25-30 minutes, or until golden brown and a toothpick inserted in the center comes out clean.

                  Let the cookie bars cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely before cutting into squares or rectangles.
