2 pounds chuck roast, cut into 1-inch cubes

3 tablespoons olive oil

1 large onion, chopped

3 cloves garlic, minced

4 medium carrots, sliced

3 medium potatoes, peeled and cubed

2 cups beef broth

1 cup diced tomatoes (canned or fresh)

1 tablespoon tomato paste

2 teaspoons dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper to taste

2 tablespoons all-purpose flour (optional, for thickening)

Fresh parsley, chopped (for garnish)

Instructions
 

Heat 2 tablespoons of olive oil in a large Dutch oven or pot over medium-high heat.

    Season the beef cubes with salt and pepper. Working in batches, add the beef to the pot and brown it on all sides, about 5-7 minutes. Remove the browned beef and set it aside.

      In the same pot, add the remaining tablespoon of olive oil, then add the chopped onion and sauté until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

        Return the browned beef to the pot and add the carrots and potatoes. Stir to combine.

          Pour in the beef broth and diced tomatoes, followed by the tomato paste, thyme, rosemary, and bay leaf. Bring the mixture to a simmer.

            Reduce the heat to low, cover the pot, and let it simmer gently for about 1.5 to 2 hours, or until the beef is tender.

              If you prefer a thicker stew, mix the flour with a little water to create a slurry and stir it into the pot during the last 30 minutes of cooking.

                Taste and adjust seasoning with additional salt and pepper, if necessary. Remove the bay leaf before serving.

                  Ladle the stew into bowls and garnish with fresh chopped parsley.
