2 boneless ribeye steaks (about 1 inch thick)

Salt and black pepper (to taste)

2 tablespoons olive oil

2 cloves garlic, minced

1 cup heavy cream

1 cup crumbled Gorgonzola cheese

1 tablespoon fresh parsley, chopped (for garnish)

½ teaspoon red pepper flakes (optional, for a kick)

½ cup beef broth

1 tablespoon balsamic vinegar

Prepare the Steaks: Season both sides of the ribeye steaks with salt and black pepper. Allow them to sit at room temperature for about 30 minutes to ensure even cooking.

    Sear the Steaks: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned steaks and sear for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Remove the steaks from the skillet and let them rest on a plate, covered loosely with aluminum foil.

      Make the Gorgonzola Sauce: In the same skillet, reduce the heat to medium and add minced garlic. Sauté for about 1 minute until fragrant. Then pour in the beef broth and balsamic vinegar, scraping up any brown bits from the bottom of the skillet.

        Add Cream and Cheese: Stir in the heavy cream and bring it to a gentle simmer. Reduce the heat to low and mix in the crumbled Gorgonzola cheese until melted and smooth. If you desire a spicier sauce, add the red pepper flakes at this stage.

          Combine and Serve: Return the rested steaks to the skillet, coating them in the creamy sauce for a minute. Once coated and heated through, plate the steak and drench with extra sauce. Garnish with fresh chopped parsley.
