8 ounces rotini pasta

1 pound ground beef or turkey

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 can (14.5 ounces) diced tomatoes (with juices)

2 cups beef broth

1 cup black beans, rinsed and drained

1 cup frozen corn

1 cup cheddar cheese, shredded

1 cup pepper jack cheese, shredded

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sour cream (for serving, optional)

Instructions
 

In a large skillet or sauté pan, brown the ground beef or turkey over medium heat. Break it apart with a spatula until no longer pink. Drain excess fat if necessary.

    Add the diced onion and minced garlic to the pan. Sauté for about 3 minutes, until the onion is translucent and fragrant.

      Sprinkle the taco seasoning over the meat mixture, stirring well to combine. Cook for another minute to toast the spices.

        Pour in the diced tomatoes (with juices), beef broth, rinsed black beans, and frozen corn. Stir to combine, ensuring everything is well distributed.

          Bring the mixture to a boil, then add the rotini pasta. Reduce the heat to a simmer, cover the pan, and cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and much of the liquid is absorbed.

            Once the pasta is cooked, remove the pan from heat and stir in the cheddar and pepper jack cheeses until melted and creamy.

              Season with salt and pepper to taste, adjusting as needed.

                Optional: Garnish with chopped cilantro and serve with a dollop of sour cream on top for added creaminess.
