Ingredients
  

1 cup orzo pasta

1 pound medium shrimp, peeled and deveined

4 cups chicken or vegetable broth

1 cup cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

½ cup grated Parmesan cheese

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon lemon zest

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet or pan, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Add the orzo pasta to the skillet and toast it for about 2-3 minutes, stirring frequently until it starts to turn golden.

      Pour in the chicken or vegetable broth, and bring it to a gentle boil. Season with salt, pepper, and red pepper flakes if using.

        Reduce the heat to low, cover the skillet, and simmer for about 10 minutes, or until the orzo is tender and has absorbed most of the liquid, stirring occasionally.

          Once the orzo is cooked, add the shrimp, cherry tomatoes, spinach, lemon zest, and half of the Parmesan cheese. Stir everything together and cook for an additional 3-5 minutes, or until the shrimp are pink and cooked through.

            Remove the skillet from heat and stir in the remaining Parmesan cheese. Adjust seasoning with more salt and pepper if needed.

              Serve hot, garnished with chopped parsley and an extra sprinkle of Parmesan if desired.
