1 pound ground beef

1 onion, diced

2 cloves garlic, minced

1 bell pepper, diced (red or green)

2 tablespoons taco seasoning

1 can (15 oz) diced tomatoes, with juices

3 cups beef broth

8 oz rotini or penne pasta

1 cup corn (fresh, frozen, or canned)

1 cup black beans, drained and rinsed

1 cup shredded cheddar cheese

Fresh cilantro, for garnish

Salt and pepper to taste

Instructions
 

In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked, around 5-7 minutes. Drain any excess fat.

    Add the diced onion, bell pepper, and minced garlic to the pot. Sauté for 3-5 minutes, until the vegetables are softened.

      Stir in the taco seasoning and cook for another minute, allowing it to become fragrant.

        Pour in the diced tomatoes (with juices) and beef broth, and bring the mixture to a simmer.

          Add the pasta to the pot, making sure it's submerged in the liquid. Cover and cook for about 10-12 minutes, or until the pasta is al dente, stirring occasionally to prevent sticking.

            Once the pasta is cooked, stir in the corn and black beans. Cook for an additional 2-3 minutes to heat through.

              Remove the pot from heat and stir in the shredded cheddar cheese until melted and creamy. Season with salt and pepper to taste.

                Serve immediately, garnished with fresh cilantro.
