12 oz (340g) spaghetti or fettuccine

4 large onions, thinly sliced

4 cloves garlic, minced

3 tablespoons olive oil

2 cups beef broth (or vegetable broth for vegetarian option)

1 cup heavy cream

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

Salt and pepper to taste

1 cup shredded Gruyère cheese

1 cup shredded Parmesan cheese

Fresh parsley, chopped (for garnish)

Sauté the Onions: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the thinly sliced onions and sprinkle with a pinch of salt. Cook, stirring occasionally, for about 15-20 minutes, until the onions are caramelized and golden brown.

    Add Garlic: Once the onions are caramelized, add the minced garlic and cook for an additional 1-2 minutes, until fragrant.

      Deglaze the Pot: Pour in the Worcestershire sauce and scrape the bottom of the pot to release any brown bits. This enhances the flavor.

        Combine Ingredients: Add the uncooked pasta, beef broth, heavy cream, dried thyme, salt, and pepper to the pot. Stir everything together until the pasta is submerged.

          Cook the Pasta: Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let it cook for 10-12 minutes, or until the pasta is al dente, stirring occasionally to prevent sticking.
