12 oz spaghetti

1 tablespoon olive oil

3 cloves garlic, minced

1 small onion, chopped

1 red bell pepper, diced

1 zucchini, sliced

1 can (14 oz) diced tomatoes (with juice)

4 cups vegetable broth

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional for extra heat)

Salt and pepper to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese (optional, for serving)

Instructions
 

Heat the Olive Oil: In a large pot over medium heat, add the olive oil and allow it to heat up.

    Sauté Aromatics: Add the chopped onion, minced garlic, and diced red bell pepper to the pot. Sauté for about 3-4 minutes until the onions become translucent.

      Add the Zucchini: Stir in the sliced zucchini and continue to sauté for another 2 minutes.

        Combine Remaining Ingredients: Pour in the diced tomatoes (with juice), vegetable broth, spaghetti, dried basil, dried oregano, red pepper flakes, salt, and pepper.

          Bring to a Boil: Stir everything together and bring the mixture to a boil over high heat.

            Cook the Spaghetti: Once boiling, reduce the heat to medium-low. Cover the pot and let it simmer for 10-12 minutes, stirring occasionally, until the spaghetti is cooked and the liquid has mostly absorbed.

              Serve: Remove the pot from heat. Taste and adjust seasonings if necessary. Serve hot, garnished with fresh basil leaves and grated Parmesan cheese if desired.
