2 salmon fillets (about 6 oz each)

1 cup orzo pasta

2 cups vegetable or chicken broth

1 medium lemon (zested and juiced)

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach

1/4 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Sear the Salmon: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the salmon fillets with salt and pepper. Once the oil is hot, add the salmon, skin side down, and cook for about 4-5 minutes, until the skin is crispy. Flip and cook for an additional 2-3 minutes until cooked through. Remove from the skillet and set aside.

    Cook the Orzo: In the same skillet, add the remaining tablespoon of olive oil. Toss in the minced garlic and sauté for about 30 seconds until fragrant. Add the orzo and stir to coat the pasta with the oil and garlic.
