1 cup almonds (or almond flour)

1 cup pitted dates

1/4 cup unsweetened shredded coconut

2 tablespoons orange blossom water

1 tablespoon honey (or maple syrup for a vegan option)

Zest of 1 orange

1/4 teaspoon salt

Extra shredded coconut for rolling

Instructions
 

In a food processor, combine the almonds, pitted dates, shredded coconut, orange blossom water, honey, orange zest, and salt.

    Pulse the mixture until a sticky, cohesive dough forms. If the mixture is too dry, add a few drops of water until it holds together.

      Take small portions of the dough (about a tablespoon each) and roll them into balls between the palms of your hands.

        Roll the balls in the extra shredded coconut until they are fully coated.

          Place the coated balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes to set.
