Ingredients

4 large russet potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

4 cups chicken broth (or vegetable broth for a vegetarian option)

1 cup heavy cream

1 cup milk

1 teaspoon salt (to taste)

½ teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

4 oz. crisp cooked bacon, crumbled

1 cup shredded cheddar cheese

¼ cup chopped green onions (for garnish)

Fresh chives (optional, for garnish)

Instructions

Prepare the Potatoes: In a large pot, combine the diced potatoes, chopped onion, minced garlic, and chicken broth. Bring it to a boil over medium-high heat.

Cook the Vegetables: Once boiling, reduce the heat to medium-low. Cover the pot and let it simmer for 20 minutes or until the potatoes are tender.

Blend the Soup: Using an immersion blender, puree the soup to desired consistency. If you prefer chunks of potatoes, blend only half of it. Alternatively, you can transfer to a blender in batches.

Add Creaminess: Stir in heavy cream and milk until well combined. Heat the soup gently over low heat, careful not to boil.

Season: Add salt, black pepper, garlic powder, and onion powder. Adjust seasoning according to your taste.

Finish with Toppings: Stir in the crumbled bacon and shredded cheddar cheese until melted. Serve hot, garnished with chopped green onions and fresh chives if desired.

Enjoy: Ladle the soup into bowls and serve immediately, perhaps with crusty bread on the side.
