8 slices of whole grain bread, cubed

6 large eggs

2 cups milk (or a dairy alternative)

1 cup shredded cheddar cheese

1 cup cooked and crumbled breakfast sausage (or plant-based sausage)

1 bell pepper, diced (any color)

1 small onion, diced

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh parsley or chives, for garnish

Instructions
 

In a large mixing bowl, combine the cubed bread, cooked sausage, diced bell pepper, and onion. Toss lightly to ensure even distribution.

    In another bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.

      Pour the egg mixture over the bread and sausage mixture. Use a spatula to gently fold and ensure all the bread is coated with the egg mixture.

        Sprinkle the shredded cheddar cheese evenly over the top. Press down slightly to help the cheese stick to the mixture.

          Cover the dish with plastic wrap or a lid and refrigerate overnight (or for at least 6 hours). This allows the bread to absorb the egg mixture.

            Preheat your oven to 350°F (175°C).

              Remove the casserole from the fridge and uncover. Bake in the preheated oven for 45-55 minutes, or until the center is set and the top is golden brown.

                Let it cool for a few minutes before slicing. Garnish with fresh parsley or chives before serving.
