1 pound breakfast sausage (mild or spicy, based on preference)

6 large eggs

2 cups milk

1 teaspoon Dijon mustard

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

1/4 teaspoon salt

1/4 teaspoon black pepper

5 cups cubed day-old French bread

1 cup shredded cheddar cheese

1 cup diced bell peppers (red, yellow, or green)

1/2 cup green onions, sliced (for garnish)

Cook the Sausage: In a large skillet over medium heat, cook the breakfast sausage until browned and cooked through. Break it apart with a spatula into small crumbles. Drain any excess grease and set aside to cool slightly.

    Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, Dijon mustard, garlic powder, onion powder, paprika, salt, and black pepper until fully combined.

      Assemble the Casserole: In a greased 9x13-inch baking dish, spread the cubed French bread evenly across the bottom. Layer the cooked sausage, diced bell peppers, and shredded cheddar cheese over the bread.

        Pour Egg Mixture: Pour the egg mixture evenly over the bread and sausage layers, ensuring all pieces are moistened. Gently press the bread down with a spatula to soak up the egg mixture.
