In an effort to promote Thai nationalism and encourage the consumption of local foods, Phibunsongkhram introduced Pad Thai as part of a campaign to create a unique Thai identity. 8 oz rice noodles

2 tbsp tamarind paste

3 tbsp fish sauce

1 tbsp soy sauce

2 tbsp palm sugar (or brown sugar)

1 tbsp lime juice

2 tbsp vegetable oil

3 cloves garlic, minced

1 medium onion, sliced

1 cup bean sprouts

2 eggs, lightly beaten

1 cup cooked shrimp or chicken (optional)

1/2 cup green onions, chopped

1/4 cup crushed peanuts

Lime wedges for serving

Fresh cilantro leaves for garnish

Red chili flakes for spice (optional)

Instructions
 

Prepare the Noodles: Soak the rice noodles in warm water for about 20-30 minutes until soft, then drain and set aside.

    Make the Sauce: In a bowl, mix tamarind paste, fish sauce, soy sauce, palm sugar, and lime juice until well combined. Set aside.

      Cook Aromatics: Heat vegetable oil in a large skillet over medium heat. Add minced garlic and sliced onion, sauté until fragrant and slightly softened (about 3 minutes).

        Scramble the Eggs: Push the garlic and onion to one side of the skillet. Pour in the beaten eggs and scramble them until cooked. Mix with the onion and garlic.

          Add Noodles: Add the soaked noodles to the skillet, along with the prepared sauce. Toss everything together, ensuring the noodles are fully coated with the delicious sauce.

            Incorporate Veggies and Proteins: Stir in the bean sprouts, cooked shrimp or chicken (if using), and half of the green onions. Sauté for another 2-3 minutes until everything is heated through and the bean sprouts are slightly tender.

              Serve: Remove from heat and plate the Pad Thai. Top with crushed peanuts, the remaining green onions, and garnish with lime wedges and cilantro leaves. Add red chili flakes for an extra kick if desired.
