4 salmon fillets (about 6 ounces each)

2 tablespoons olive oil

Salt and pepper to taste

4 cups fresh spinach

1 clove garlic, minced

1/2 cup heavy cream

1/4 cup grated parmesan cheese

1/2 teaspoon lemon zest

1 tablespoon lemon juice

1/4 teaspoon nutmeg

1/4 cup sun-dried tomatoes, chopped (optional)

Prepare the Salmon: Season both sides of the salmon fillets with salt and pepper.

    Heat the Oil: In a large skillet, heat the olive oil over medium-high heat until hot but not smoking.

      Sear the Salmon: Carefully place the salmon fillets in the skillet, skin-side down. Cook for about 4-5 minutes, without moving them, until the skin is crispy. Flip the fillets and cook for another 3-4 minutes until the salmon is cooked through and flakes easily with a fork. Remove the fillets and set aside.

        Sauté the Spinach: In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant. Then add the fresh spinach and cook until wilted, about 2-3 minutes.

          Make the Sauce: Lower the heat and pour in the heavy cream. Stir in the grated parmesan cheese, lemon zest, lemon juice, nutmeg, and adjust salt and pepper to taste. If using, add the chopped sun-dried tomatoes, and let the sauce simmer for about 2-3 minutes until slightly thickened.

            Combine: Return the salmon fillets to the skillet, resting them on top of the creamy spinach sauce. Allow everything to warm together for about 1-2 minutes.

              Serve: Plate the salmon fillets garnished with a spoonful of cream sauce and a sprinkle of additional parmesan cheese if desired.
