8 oz (225 g) pasta of your choice (spaghetti or fettuccine works well)

4 strips of bacon, chopped

1 cup sweet corn (fresh or frozen)

2 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 tsp black pepper

1/2 tsp red chili flakes (optional)

Salt to taste

Fresh basil leaves for garnish

Instructions
 

Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    In a large skillet over medium heat, cook the chopped bacon until it becomes crispy. Use a slotted spoon to remove the bacon and place it on a paper towel-lined plate, leaving the bacon fat in the skillet.

      In the same skillet, add the minced garlic to the bacon fat and sauté for about 1 minute until fragrant.

        Add the sweet corn to the skillet and cook for an additional 5 minutes until it is slightly caramelized and tender. Stir occasionally.

          Pour in the heavy cream and bring to a gentle simmer. Reduce the heat to low and gradually whisk in the Parmesan cheese until melted and the sauce is creamy.

            Add the cooked pasta to the sauce, tossing it well to coat. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency.

              Season with black pepper, red chili flakes (if using), and salt to taste. Mix well.

                Finally, add the crispy bacon back into the pasta and stir to combine everything evenly.
