8 oz (225g) pasta of choice (e.g., penne or fusilli)

2 tablespoons olive oil

3 cloves garlic, minced

8 oz (225g) mushrooms, sliced (cremini or button)

4 cups fresh spinach (about 5 oz)

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional)

½ cup chicken or vegetable broth

½ cup grated Parmesan cheese

¼ cup heavy cream (optional, for creaminess)

Fresh basil leaves, for garnish

Additional Parmesan cheese, for serving

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta al dente according to package instructions. Drain and set aside, reserving ½ cup of the pasta water.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

      Add the Mushrooms: Next, add the sliced mushrooms to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the mushrooms are golden brown and have released their moisture.

        Incorporate Spinach: Add the fresh spinach to the skillet, along with salt, black pepper, and red pepper flakes (if using). Cook for about 2-3 minutes, or until the spinach has wilted.

          Combine with Broth: Pour in the chicken or vegetable broth, scraping any browned bits from the bottom of the skillet. Bring the mixture to a light simmer.

            Mix in Pasta: Add the cooked pasta to the skillet. Stir well to combine all ingredients. If the mixture seems dry, add a bit of the reserved pasta water as needed.

              Add Cream and Cheese: Stir in the grated Parmesan cheese and heavy cream (if using) until melted and combined. Taste and adjust seasoning if necessary.

                Serve: Remove from heat and garnish with fresh basil leaves. Serve hot, topped with additional grated Parmesan cheese if desired.
