Ingredients
  

1 lb pastrami, thinly sliced

2 cups sauerkraut, drained and rinsed

4 large whole wheat tortillas

1 cup Swiss cheese, shredded

¼ cup Dijon mustard

2 tablespoons mayonnaise

1 tablespoon apple cider vinegar

½ teaspoon garlic powder

½ teaspoon black pepper

2 tablespoons butter, for grilling

Instructions
 

In a medium-sized bowl, combine the shredded Swiss cheese, drained sauerkraut, and black pepper. Mix well and set aside.

    In a separate bowl, whisk together the Dijon mustard, mayonnaise, and apple cider vinegar until smooth. This will be your special sauce.

      Lay out a tortilla on a flat surface. Spread about 1 tablespoon of the special sauce evenly over the entire surface of the tortilla.

        Layer approximately ¼ of the pastrami slices evenly across the tortilla, followed by a quarter of the sauerkraut mixture.

          Roll the tortilla tightly from one end to the other, ensuring the filling stays intact.

            Repeat the process with the remaining tortillas, pastrami, and sauerkraut mixture.

              Heat 1 tablespoon of butter in a large skillet over medium heat. Place the rolled tortillas seam-side down in the skillet and cook for about 3-4 minutes on each side, or until golden brown and crispy.

                Once cooked, remove from the heat and slice each roll into bite-sized pieces.

                  Serve warm with extra sauce on the side for dipping.
