4 medium ripe peaches, peeled and diced

8 strips of bacon, chopped

1 small onion, finely chopped

3 cloves garlic, minced

1/2 cup brown sugar

1/4 cup apple cider vinegar

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1/2 teaspoon smoked paprika

Salt and black pepper to taste

Pinch of cayenne pepper (optional for heat)

Instructions
 

In a large skillet, cook the chopped bacon over medium heat until it becomes crispy. Use a slotted spoon to remove the bacon and drain it on paper towels, leaving the bacon fat in the skillet.

    Add the chopped onion to the skillet with the bacon fat and cook over medium heat, stirring occasionally, for about 5 minutes or until the onions are soft and translucent.

      Stir in the minced garlic and cook for an additional minute until fragrant.

        Add the diced peaches, brown sugar, apple cider vinegar, thyme, smoked paprika, and the cooked bacon back into the skillet. Stir well to combine all the ingredients.

          Bring the mixture to a simmer and cook for about 20-25 minutes, stirring occasionally until the peaches break down and the jam thickens. Season with salt, black pepper, and cayenne pepper (if using) to taste.

            Once thickened, remove from heat and let the jam cool slightly. If you prefer a smoother texture, you can puree it using an immersion blender or transfer it to a standard blender for a few pulses.

              Store the bacon jam in a clean jar or airtight container. It can be refrigerated for up to 2 weeks.
