2 cups all-purpose flour

1 cup fresh peaches, diced

3/4 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup unsalted butter, melted

1 cup milk

2 large eggs

1 tablespoon baking powder

1 teaspoon vanilla extract

1/2 teaspoon salt

1 teaspoon cinnamon

1/2 cup rolled oats

1/4 cup chopped nuts (walnuts or pecans)

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray with non-stick cooking spray.

    In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon.

      In a separate bowl, whisk the melted butter, milk, eggs, and vanilla extract until well combined.

        Gradually pour the wet ingredients into the dry ingredients, gently mixing until just combined. Do not overmix.

          Fold in the diced peaches, being careful not to break them apart too much.

            In another bowl, prepare the streusel topping by combining the brown sugar, rolled oats, chopped nuts, and a pinch of cinnamon. Mix in a drizzle of melted butter until the mixture is crumbly.

              Scoop the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.

                Sprinkle a generous amount of the streusel topping over each muffin.

                  Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.

                    Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
